Kiwi + Mint Tropical Smoothie
There may be a storm brewing outside, but this smoothie has me feeling like I'm laying in a hammock on the beach, watching the warm waves crash in Costa Rica. This is a delicious twist on the green smoothie. I'm calling for coconut water as your base, but regular water'll do just fine.
Ingredients
Makes two Smoothies
- 2 cups unsweetened coconut water
- 1 1/2 cups fresh baby spinach
- 1 1/2 cups frozen pineapple chunks
- 2 kiwis, peeled and sliced
- 1 banana, fresh or frozen
- 1/2 cup fresh mint leaves, plus a couple sprigs for garnish
Make
Combine all ingredients in a blender, and blend until smooth. Yes, that's it.
Pour into two tall glass, and garnish with your extra mint sprigs.
