Starbucks may already be serving their Pumpkin Spice Latte, but it’s still summer! I’ve been determined to justify the space my ice cream maker takes up by actually using it, et voilà: here’s a naturally sweetened, super fresh, too-easy-to-believe watermelon sorbet you can take to any (dirty) dance party.

How To Pick a Good Watermelon

3 Tips for Choosing the Perfect Watermelon

  1. Check its weight. A ripe watermelon will feel heavy for its size—the heavier, the juicier! When you’re staring down at a bin full of melons, start picking them up and comparing the feel of their weight. Choose the one that feels heaviest for its size.

  2. Tap it. You can check the ripeness of a watermelon by the sound it makes when you tap or thump it. A ripe watermelon will have a deep sound when you knock your knuckle on it (like knocking on a door). If it has a hollow or flat sound, it’s not the watermelon you’re looking for.

  3. Inspect its “field spot.” This is the mark on the watermelon that shows where it rested on the ground before being cut from the vine. A yellow field spot means the watermelon spent more time ripening on the vine, which will make it sweeter. Avoid a melon with a whiter field spot. It was likely picked too soon, and didn’t reach peak ripeness before harvested.

Easy, naturally sweetened, and super fresh—the ultimate chill.

Ingredients

1 cup maple syrup

1/4 cup fresh lemon juice

3 cups chopped watermelon, seeds removed

Instructions

  1. Make your maple simple syrup: In a small pot, add 1/2 cup water to maple syrup and heat to a low simmer for about five minutes. Remove from heat and stir in lemon juice. Set aside to cool while prepping watermelon.

  2. Purée the watermelon: Once melon is cut and seeds removed, purée in a blender, stirring in cooled maple/lemon mixture at the end.

  3. Make it icy: Freeze the watermelon/syrup mixture in an ice-cream maker according to the machine’s instructions.

To serve, get creative! I topped mine with fresh berries and a cocktail umbrella and imagined I was vacationing at a summer resort in the Catskills… but you do you.

Store: in an airtight container in the freezer.
