Think Pink Smoothie

grapefruit smoothie

I'm obsessed with grapefruits. Sorry/not sorry if you're not. This smoothie is so good, though.

Grapefruit and strawberries are loaded with antioxidants and Vitamin C to boost your immunity, apples are packed with fiber, and ginger improves digestion and absorption, and also acts as an anti-inflammatory. Feel free to use regular water instead of coconut water. I just like the added potassium and hydration of coconut water.

Ingredients

  • 1 whole grapefruit peeled, seeded, and chopped
  • 2 cups strawberries frozen or fresh, hulled
  • 1 apple, any pink variety cored and chopped (leave the skin on for the fiber!)
  • 1 inch fresh ginger peeled and chopped
  • 1 cup coconut water

Make

Toss it all in a blender, and press go! There will be enough for two servings, so you can either share, or refrigerate the extra in a jar for tomorrow. When you’re ready to use the leftover smoothie, pour it back into the blender, add a ½ cup of ice, and blend it up again.
