The Simplest Quinoa + Kale Bowl
Full disclosure:
I don't love to cook.
I'm not one of those blessed humans who can just glide into a kitchen, intuitively toss stuff together in a pan, et viola: magic!
Cooking mostly feels like work to me. And I need a recipe. Like, I still double check the instructions on the back of the rice bag.
Seriously.
Having said that, it's been important enough to me to eat clean, home-cooked meals, that I've spent time searching for recipes that don't require hours of prep or a whole lot of know-how.
This is one of those recipes. It's simple, clean, and quick--especially if you're using leftover quinoa!
Here's to cooking healthy, plant-based meals, in 10 minutes!
Ingredients
1 tablespoon extra virgin olive oil
Coarse sea salt
3 large kale leaves (stems discarded), torn into bite-sized pieces
1/2 cup cooked quinoa (leftovers are great!)
Freshly ground black pepper (or cayenne pepper, to taste)
1 scallion, sliced
Make
Heat the oil and a pinch of coarse sea salt over medium heat in a medium skillet, just 1 minute. Add the kale and cook, stirring, until the kale softens, 2 to 3 minutes. Add the quinoa and cook, still stirring, just until the quinoa is warmed through, another 2 minutes. Transfer the mixture to a bowl, sprinkle with scallions and a big grind of black pepper, or cayenne pepper if you're in the mood.
Et voila! A big bowl of goodness in less than 10 minutes.
